Method:
-Soak 1/4 cup sago pearls for 2 hours. (If you are in a hurry you can soak for less time and boil the sago till they are cooked)
-Boil 1L full fat milk in a large saucepan.
-Meanwhile, grate 1 cup of lauki and fry this for 5-6 minutes in some ghee. -Add this lauki to the boiling milk and also add the soaked
sago pearls at this stage.
-Cook on low heat for 20-25 min till the kheer thickens.
-Once it has thickened to the desired consistency, add a pinch of cardamom powder, sugar as per requirement and 3 tbsp of condensed milk.
-Add dryfruits of your choice, I added slivered almonds, cashews and pistachios.
-Cook for another 3-4 minutes. You can add green food colour
at this step for that tinge of green
-Garnish with more dryfruits and edible rose petals.
-Serve hot or chilled
